If you think Genghis Khan (lamb BBQ) is only meant to be grilled, you will be surprised in Nayoro. Nayoro Nikomi Jingisukan involves stewing mutton and plenty of vegetables in a rich sauce, and the authentic Nayoro way is to eat it together with udon noodles. It is a local dish that has been loved in households for over half a century. Its roots are said to trace back to 1937, when a woman who learned the Genghis Khan cooking method in Takikawa spread it to local farmers. The stewed style began when noodles were added to prevent the sauce—which had a high ratio of liquid—from overflowing the pot. This single-pot dish, uniquely nurtured in the northern lands, has also been certified as a '100-Year Food' by the Agency for Cultural Affairs. Even in the cold winters, the people of Nayoro gather around this Genghis Khan to warm their bodies.
