Scallops
The cold waters of the Sea of Okhotsk produce scallops full of sweetness. Using the 'ground-sowing method,' where larvae are scattered into the sea to grow amidst nutrient-rich seawater and the bounty of plankton brought by drift ice, these scallops are carefully raised over a period of four years. Scallops that have grown over such a long time are characterized by firm meat and highly concentrated sweetness. When enjoyed fresh as sashimi, a rich sweetness and the umami of the sea spread through your mouth along with a plump texture. They are also exquisite when pan-fried in butter or deep-fried, making them delicious no matter how they are prepared. This is a prideful seafood delicacy representing the Okhotsk region.
