Crab (Horsehair Crab, King Crab)
In winter in Hokkaido, this is the king of flavors that everyone craves. The Sea of Okhotsk, which borders Monbetsu, is a bountiful sea where all three major types of crab—Horsehair crab, King crab, and Snow crab—are harvested. Horsehair crab has soft, delicate meat, and its crab miso (tomalley) in early spring is particularly sweet and rich. On the other hand, King crab offers a satisfyingly meaty texture with plump flesh packed into thick legs. As for Snow crab, you can enjoy intense sweetness and rich crab miso within its silk-like fine meat. Horsehair crabs caught when the drift ice begins to melt are especially well-filled with meat and possess an extraordinary sweetness.
