Shikotsu Lake Chipp (Kokanee Salmon)
If you thought of sweets when you heard the word 'Chipp,' you are mistaken. 'Shikotsu Lake Chipp' refers to Kokanee salmon (Himemasu), a species of landlocked pink salmon that spends its entire life in the lake without migrating to the sea. It is said that the name originated from a corruption of 'kapachep,' which means 'thin fish' in the Ainu language. These fish were transferred from Lake Akan to Lake Shikotsu in 1894. The pristine, crystal-clear waters of the lake, which boast some of the highest transparency in Japan and maintain low temperatures year-round, produce firm flesh with no odor and a perfect amount of fat. Fishing is permitted for only three months, from June to August, making it an extremely precious ingredient. Tasting salmon-pink sashimi or salt-grilled fillet by the lakeshore is a luxury that can truly only be experienced here.
