Noboribetsu Jigoku Ramen

A bowl with a bright red soup that might make you recoil in fear. Noboribetsu's famous 'Jigoku (Hell) Ramen' is known as the signature dish of 'Aji no Daio' located in the hot spring town. Its name is derived from Noboribetsu's iconic sightseeing spot, 'Jigokudani (Hell Valley),' and the red ogre (oni) that serves as a symbol of the hot spring town. In honor of the ogre, sliced onions are added to the dish. The spiciness level starts at '0-chome,' and you can choose levels like 1-chome, 2-chome, etc., by adding 50 yen for each step. It is said that if you finish a bowl of level 10-chome or higher, your name will be displayed on the restaurant wall. The reason it has been loved for so long is the deep umami and richness hidden behind the heat. This specialty dish will heat your body to the core after a soak in the hot springs. It is a bowl well worth the challenge.
