When thinking of the fatty flavors of autumn, this is what comes to mind. Hanasaki Port in Nemuro is a port town that boasts one of the highest Pacific saury landings in the country. Because the fishing grounds are nearby, saury caught at night can be landed the very next morning, earning it the local nickname "day-trip saury." In the waters off Nemuro, where the southward migration begins, plump and fat saury are caught; their freshness and richness are unique to this production area. When salt-grilled, the skin becomes crispy and fragrant, while the flesh remains juicy. It grills up plump and full of fat. The freshness is such that freshly caught fish can even be enjoyed as sashimi, a luxury unique to this region. As autumn arrives, it becomes an indispensable seasonal delicacy nurtured by the seas of Nemuro on local dining tables.
