Hanasaki Crab

Known as the 'phantom crab' of Nemuro, it turns a brilliant red like a blooming flower when boiled. Hanasaki crab is caught along the Pacific coast from Erimo to Nemuro, and in the Sea of Okhotsk around the Nemuro Peninsula. The name is said to derive either from the abundance of catches once found in the Hanasaki Peninsula or from the magnificent vermilion color it takes on when boiled. Because the fishing season is limited to around April through September and its availability in the market is brief, it is often called the 'phantom crab.' Its rich miso (crab tomalley) and densely packed, sweet meat are exquisite. When prepared as Teppo-jiru (crab soup), the savory umami seeping from the shell dissolves into the broth, warming you to your core. We invite you to enjoy its powerful, deep flavor, which offers a different experience from King Crab.
