Scallops
These scallops are thick and sweet, raised in the cold waters of the Okhotsk Sea. Lake Saroma, which borders the Shari area, is known as the birthplace of scallop aquaculture. Using a method called 'jimaki,' where juvenile scallops are raised in the calm waters of Lake Saroma before being released into the Sea of Okhotsk, they are allowed to grow large and steady over several years. Benefiting from the cold sea and abundant plankton, these scallops are characterized by their thick flesh and robust sweetness. When eaten as sashimi, you can experience the pure power of the ingredients. When prepared with butter or fried, you can enjoy a different dimension of sweetness and umami. Shari is often called the 'Kingdom of Scallops' and is known nationwide as a representative seafood specialty of Kitami.
