This yakisoba is a dish that captures the blessings of Kitami's sea and land in a single plate. Okhotsk Kitami Salt Yakisoba is a local gourmet dish developed by local volunteers following the municipal mergers in 2006. Eight specific rules have been established, such as using Hokkaido-grown wheat noodles, Okhotsk scallops, and Kitami onions (which have the highest production volume in Japan), with salt used for seasoning. To finish, a 'magic water' made from scallop broth is poured onto the griddle; as it sizzles, the aroma of the sea rises with the steam. With the scallop dashi and the sweetness of the onions thoroughly coating the noodles, it offers a flavor unique to Kitami. It is a local dish that resonates with all five senses, enjoyable through sight, sound, and smell.
