It is said that around 1980, the owner of a fish shop began providing small portions of seafood to travelers on a budget by having them buy rice and then adding various toppings for them. Today, it has become a market specialty where the custom of buying white rice and selecting your favorite toppings bit by bit has become well-established. There is an exceptional joy in creating your own 'ultimate bowl' by choosing small amounts of ingredients like salmon roe, sea urchin, and crab.
