Kushiro Zangi

Kushiro is the birthplace of Zangi, a soul food of Hokkaido. Kushiro Zangi was born in 1960 at the yakitori restaurant 'Torimatsu' in Kushiro City. It is said to have started when, following a promotion for broiler chickens, the chicken was cut into pieces and deep-fried until crispy. The name 'Zangi' is said to be derived from the Chinese word for fried chicken, with an auspicious 'n' sound added to the end. The original style involves seasoning the meat thoroughly with salt, ginger, and soy sauce before frying. It is crispy and fragrant on the outside and juicy on the inside. A characteristic feature is that various parts of the chicken are served together on one plate, allowing the savory flavor of the chicken to spread with every bite. Its compatibility with beer goes without saying.
