Otaru Ankake Yakisoba

This is the soul food of this port town, long loved by the people of Otaru. Otaru Ankake Yakisoba was born during the post-war reconstruction period and spread throughout the city during the 1950s and 60s. It is characterized by a thick, starchy sauce filled with plenty of seafood and vegetables poured over fragrant, pan-fried noodles. There was even a time when eating it on the way home from shopping at department stores was considered a bit of a status symbol. In 2022, it was officially recognized as a '100-Year Food' by the Agency for Cultural Affairs, a designation intended to pass regional food cultures down to future generations. Each Chinese restaurant in the city has its own unique style, offering endless enjoyment through comparing different ingredients and flavors in the sauce. It is a dish that makes you crave a steaming hot serving.
