This is a yakiniku style that relies on the power of the ingredients without using unnecessary additives. Shio Horumon is a type of grilled offal said to have originated in Asahikawa. Pork offal marinated in a salt-based seasoning is slowly grilled over charcoal in a shichirin brazier. Asahikawa has long been an area with a thriving pig farming industry, making fresh offal easy to obtain; combined with the custom of eating organ meats dating back to the post-war food shortages, this culinary culture was nurtured. The charm lies in the natural umami extracted by salt alone without relying on heavy sauces, the sweetness of the fat that spreads as you chew, and the plump texture. It is a pride of Asahikawa that makes you want to enjoy it with a cold beer while gathered around the sizzling charcoal.
