Saroma Lake Scallops
When the shell is opened, a plump, thick adductor muscle is revealed. The rich sweetness spreads gradually with every bite, and even the smaller ones are incredibly satisfying to eat. It is said that during winter, they accumulate more flavor as they store nutrients to protect themselves from freezing. Lake Saroma is considered the birthplace of scallop farming. After the appearance of juvenile scallops was confirmed in the lake in 1931, and following extensive research, an aquaculture cooperative was established in 1952 with investment from the local fisheries cooperative. This marked the beginning of the transition from 'hunting fisheries' to 'farming fisheries.' This brackish lake, connecting Hokkaido to the Sea of Okhotsk, nurtures these abundant blessings. These are our prideful scallops, raised by the harsh cold of the Okhotsk region.
