Okhotsk Salt-Grilled Yakisoba

On the iron griddle, scallops and plenty of onions dance fragrantly. Rather than using soy sauce or sauce, this yakisoba is finished with a saltiness that brings out the natural sweetness of the ingredients, leaving a clean aftertaste. Its creation is relatively recent. Following the merger of towns like Saru in 2006 to form the new Kitami City, voices arose wanting to create a local specialty, leading to its debut in 2007. A key feature is that specific rules must be followed: using Okhotsk scallops, Kitami onions, Hokkaido wheat noodles, a salt-based seasoning, and serving it on a hot griddle. It can truly be called a local gourmet dish that gathers the region's ingredients into a single plate. All the specialties of Kitami packed into one dish. This is yakisoba that allows you to taste the blessings of the Okhotsk region.
