Chuka Chirashi
White rice topped with a generous portion of shrimp, squid, egg, and bean sprouts coated in a sweet and savory soy sauce. While it resembles a 'Chuka-don' (Chinese bowl), it does not feature a thick, starchy sauce. It is a dish that clings perfectly to the rice, making it incredibly appetizing. It is said that this Chuka Chirashi originated in Obihiro rather than Asahikawa. Around 1970, it was created as a staff meal at a local Chinese restaurant, eventually making its way onto the menu and evolving into a regional gourmet specialty. Today, it can be enjoyed at various restaurants throughout Hokkaido, including areas like Asahikawa. It is a slightly unique variation since it lacks the traditional thick sauce.
