Obihiro Butadon (Pork Bowl)

Fragrant pork grilled over charcoal is glazed with a sweet and savory soy sauce. Taking a bite of the meat atop the rice allows the aroma of the sauce and the richness of the pork to spread throughout your mouth. It is said to have been created by Shuji Abe, who opened the public dining hall 'Pancho' in Obihiro in 1933. Seeking to create a menu unique to Tokachi, he focused on the concept of Unadon (eel bowl). Using a similar soy-based seasoning, he perfected the Butadon, aiming for a flavor that would surpass eel bowls. It is told that by intentionally not trademarking the recipe and allowing others to make it, the dish spread as an Obihiro specialty. Today, it is a representative local gourmet dish of Tokachi. A single bowl that can be called the soul food of Tokachi.
