Goto-ken Curry
As you dip your spoon, a thick, deep-colored roux is revealed. With aromatic spices and rich depth, every bite allows you to feel the history of Western cuisine continuing since the Meiji era. Goto-ken was founded in 1879 (Meiji 12) as a 'Russian cuisine and bread shop' in Hakodate. The shop name is derived from the first head chef, Eikichi Goto, who hailed from the Goto Islands in Nagasaki. Eikichi's experience learning Russian cuisine at the Hakodate Orthodox Church became the foundation of this curry. During the Taisho era, the second generation incorporated techniques refined at the Imperial Hotel and polished the flavor into its current form using local ingredients. This is the taste of a long-established institution that has walked alongside the port city of Hakodate for over 140 years.
