Ika Somen (Squid Noodles)
Dip the translucent, finely sliced pieces into the sauce and slurp them just like somen noodles. As you do, a rich sweetness and a crunchy texture spread through your mouth. The squid used is mainly Japanese flying squid, which is abundant in the summer. The history of squid fishing in Hakodate is said to span about 150 years, beginning when fishermen from Sado introduced their techniques in the early Meiji era. The name 'Ika Somen' is relatively new; originally, it was simply finely sliced squid sashimi. There are various theories regarding its origin, and nothing is known for certain. In the Hakodoate Morning Market, some shops will even prepare freshly caught squid on the spot. It is a summer delicacy that the squid-loving city of Hakodate takes great pride in.
