Kaseita

A confection with a unique texture, featuring quince yokan sandwiched with chewy seeds. It is a prestigious confectionery with long-standing traditions in Kumamoto. Its name is said to have arrived via the Nanban (Portuguese) trade. It is believed to originate from 'queijada da marmelada,' which refers to quince jam in Portuguese. In 1632, Hosokawa Sansai, who entered Kumamoto, took a liking to this sweet; he used it in tea ceremonies and presented it to the Shogunate and the nobles of Kyoto, making it a representative masterpiece of Kumamoto. While quince was originally used, the supply of ingredients was cut off by the Shimabara Earthquake/Tsunami of 1792. It was later restored using quince, and in the Heisei era, Kashi no Kobo revived it once again, carefully preserving and passing down the tradition to the present day.
