A dacquoise carefully crafted by Okashi no Koubai using Kumamoto-grown matcha. The dough, created from well-whipped meringue, is crispy on the outside and moist on the inside. Inside the melt-in-your-mouth matcha cream, pieces of plumply cooked Dainagon adzuki beans (kanoko) are hidden. The mellow aroma of local tea leaves spreads softly with every bite. An elegant fusion baked sweet where the lightness of meringue meets the Japanese sweetness of matcha and adzuki beans. It pairs well with both tea and coffee.
