Mushagaeshi

This is a signature confection from Kohme that replicates the famous 'Mushagaeshi' stone walls of Kumamoto Castle. The name softly embodies the beautiful curves of the walls, which were designed to curve upward to prevent warriors from invading. The thin pie crust is made with plenty of fresh butter folded in, resulting in an incredible 100 layers. Inside, it encloses a light purple smooth red bean paste, made by carefully removing the skins from the adzuki beans before cooking. The crispy pie meets elegant, subtly sweet Japanese bean paste. This melting fusion of East and West pairs perfectly with both tea and coffee. It is a treat to be enjoyed slowly while feeling the prestige of Kumamoto Castle.
