Umemuraya Yamaga Yokan
When you take a bite, the rice flour dough is soft and chewy, and the elegant sweetness of the smooth red bean paste spreads through your mouth. It has a unique texture that is closer to daifuku than traditional yokan. Yamaga Yokan is a famous confection that has been loved by the people of Yamaga since the beginning of the Meiji era. It is said to have originated from a 'rolled yokan' where an elderly woman steamed rice flour, spread it thinly, and rolled smooth red bean paste inside. In the early Showa era, the predecessor of Umuuraya began naming rod-shaped rolled red bean paste as 'Yamaga Yoking,' treating it like練り羊羹 (neriyokan). Because it uses rice flour instead of glutinous rice, a key characteristic is that it does not harden easily even over time. A simple treat loved as a standard souvenir of Yamaga Onsen. The subtle hint of saltiness in the bean paste creates a delicious flavor that keeps you coming back for more.
