Sonodaya Chosen Ame

As you take a piece of the pure white confection into your mouth, it feels soft like mochi, and a gentle, fluffy sweetness spreads. It is a simple yet somehow elegant flavor. Chosen Ame is one of Kumamoto's oldest famous confections, said to have been created during the Azuchi-Momoyama period. It is made by kneading glutinous rice, starch syrup, and sugar, then finishing it with a coating of potato starch. It was originally called 'Chosei Ame' (Longevity Candy), but it is said that the name came after Kato Kiyomasa brought it as rations during his Korean campaign and praised it as a preserved food that does not spoil regardless of the climate. It is also said that the Hosokawa clan later presented it as a confection to the Shogunate. A prestigious item with over 400 years of history. A timeless, gentle sweetness that has been loved for generations.
