Josuian Mizu-yokan (Water Bean Jelly)
This is a smooth-textured Mizu-yokan produced by Josuian, a long-established Japanese confectionery shop in Fukuoka. It is a summer staple, made by carefully cooking selected adzuki beans from Tokachi, Hokkaido, and setting them into a jiggly texture using deep-sea water from areas such as off the coast of Muroto. Its charm lies in its elegant, clean sweetness and smooth, easy-to-swallow texture. The name 'Josui' is derived from Kuroda Kanbe (Josui), who laid the foundation for the Fukuoka Domain. The previous generation of the shop deeply empathized with his way of life and named it with the wish to 'create confections like Kuroda Josui.'
