"Izumi ni Maiko" is an imo shochu brewed by Izumi Shuzo in Izumi City. Izumi City is one of Japan's largest wintering grounds for cranes, with over 10,000 birds visiting every year. This spirit is named after their elegant appearance. Using Kogane Senkan as the raw material, it blends spirits brewed with white koji and black koji, then adjusts the flavor by adding aged spirit from clay vat fermentation. Its characteristic feature is that you can enjoy both the crispness of white koji and the richness of black koji in a single bottle. While preserving the natural flavor of the sweet potato, it is finished to be light and easy to drink, making it approachable for shochu beginners and women alike.
