Tocho (Setogashira Sake Brewery)

This is Ureshino's local sake, named by a Prime Minister. "Tocho" is brewed by Setogastira Sake Brewery in Shiota-cho, Ureshino City. Founded in 1789 (Kansei 1st year), this brewery originally brewed under the brand name "Heimatsumotosu." It is said that during the Taisho era, the 19th Prime Minister, Takashi Hara, praised it as "worthy of being the King of the Orient," leading to the name change to "Tocho." They are committed to using Saga-grown rice and polishing all of it in-house. Their motto, which they continue to uphold, is to "brew honest sake" using the traditional three-step fermentation process (sandan-shikomi). With a simple yet powerful flavor that gently accompanies Saga's food culture, it has long been loved by local people as a cup that never grows tiring at the daily dining table.
