Nokomi (Baba Shuzojo)
With a single sip, a subtle yet gorgeous aroma and the rich umami of rice spread across your palate. Nokomi is a slightly dry local sake designed to complement food. Brewed by Baba Shuzojo in Kashima City, Saga Prefecture, this is an established brewery with over 200 years of history, dedicated solely to sake brewing since its founding in 1795. It is born on the banks of the Nakagawa River in the Nokomi district, surrounded by lush green mountains. With a focus on enhancing meals, the brewery aims to create sake that is flavorful and rich in rice taste without being heavy or overly sweet. It pairs well with the bold flavors of Saga cuisine and offers a taste that you won't tire of even with long sessions. The Junmai Ginjo made with locally grown Yamada Nishiki rice from Kashima is also popular. Please enjoy Nokomi, brewed with all the soul of this historic brewery, as your evening drink.
