A simple sweet made by wrapping smooth bean paste in soft mochi dough. With one bite, the chewy texture of the dough and the gentle sweetness of the bean paste melt together. This is Keiran, a famous confection passed down in Karatsu. It was born around the Hamada area of Karatsu City. The traditional method of wrapping bean paste in dough made from rice has been inherited through the generations. There is a legend regarding its name: during the time when Toyotomi Hideyoshi established his camp at Nagasaka Castle, he is said to have uttered 'Kaeran' (I shall not return) while praying for victory in battle. Another theory suggests it was designed to look like a chicken egg. It offers a gentle flavor that evokes a sense of history.
