Ikkokko
When you crack it open, the inside is hollow. The brown sugar candy clings to the inner surface of the crust, spreading a savory aroma and deep sweetness. Ikkokko is a Saga baked sweet with a mysterious charm. Made by wrapping brown sugar paste in a dough kneaded with flour and malt syrup, then baking it all at once over high-temperature fire. As the filling expands from the heat and sticks to the crust, the center becomes hollow—this mechanism has earned it the name 'karakuri manju' (trick manju). It is a famous confection from the 'Sugar Road' tradition brought from Nagasaki, featuring subtle notes of ginger and sesame. With its crunchy crust and rich brown sugar sweetness, a savory aroma escapes with every bite. Please enjoy the simple yet addictive Ikkocoko alongside a cup of tea.
