Shouro Manju
Round and bite-sized. Fine smooth red bean paste appears from within a thin castella dough. Shouro Manju is an adorable Karatsu baked manju. A famous confection of Karatsu City, Saga Prefecture, it was named because its appearance resembles the 'shouro' mushrooms that grow in the famous Niji-no-Matsubara. Small balls of smooth red bean paste made from Hokkaido adzuki beans are individually and carefully baked on a copper plate while being coated in thin castella dough. With a diameter of about 2.5 cm, its hallmark is its light and refined sweetness. It is so light that you find yourself reaching for one piece after another. It is the perfect size for a tea snack. If you visit Karatsu, please be sure to taste its freshly baked fragrance.
