Gomen Kenka Shamo
When you bite into the plump, elastic meat, a deep, intense umami flavor overflows from within. Firm texture and a concentrated taste—this is 'Gomen Kenka Shamo,' the brand chicken of Gomen, Nankoku City. Originally, Shamo were raised for cockfighting. Focusing on this breed, which is said to have been favored by Sakamoto Ryoma, a local research group successfully developed it as a brand chicken for culinary use in 2009. It is a rare 100% purebred Shamo found even nationwide, preserving an authentic, traditional flavor. Shamo are difficult to raise due to their aggressive temperament and high activity levels; it is said they take about three times longer to reach market weight than standard broilers. The robust umami is a direct result of this painstaking care. It is particularly exceptional when enjoyed in a hot pot.
