Aki Eggplant

Plump eggplants with a glossy, dark luster. Their melting softness and juicy sweetness are proof of having grown while soaking up the abundant warm Tosa sunshine. This is the Aki eggplant, from Japan's number one production area. The Aki district is known as the 'birthplace of horticulture,' with traditions of fruit vegetable cultivation dating back to around 1917. Taking advantage of a climate blessed with sunlight and mild winters, eggplant cultivation in plastic greenhouses expanded around 1960. It is said that most Kochi eggplants are produced in this district today. Aki eggplants are carefully nurtured from winter through spring. Whether grilled or stewed, their sweetness and melt-in-your-mouth texture are exceptional.
