The sharp aroma and the richness of the bonito overlap, making it impossible to stop eating rice—this is Kochi's pride, 'Tosa-maki.' This thick sushi roll features seared bonito, raw garlic, and shiso as its core, and it is a rare sight to find outside of Kochi. It is said to have been originated in the 1960s/70s by the sushi restaurant 'Kiku-zushi' in Kochi City for tourists.
