Tamatsubaki

Tamatsubaki is an elegant Japanese sweet representing Himeji. With its pale pink gyuhi enveloping yellow yolk bean paste, it is a truly adorable confection designed to resemble a camellia flower, just as its name suggests. Its origins date back to 1832 (Tenpo 3). When Kiyohime married into the Sakai family, the lords of the Himeji Domain, it was one of the sweets brought back from Edo by the official confectioner, Iseya Honten, after completing their training. It is said that Kawai Sonno, the clan's chief elder, took a great liking to it and gave it the name 'Tamatsubaki.' With the gentle flavor of soft gyuhi and mellow yolk bean paste, this quintessential Himeji treat has been loved for nearly two hundred years alongside Himeji Castle, allowing one to deeply feel the prestige and history of the castle town.
