Carbonated Senbei (Arima Onsen)
Carbonated Senbei is a representative confection of Arima Onsen, one of Japan's three most historic hot spring towns. Its light, crispy texture and subtle, gentle sweetness leave a lasting impression. way back, the carbonated springs of Arima were feared as 'poisonous water,' but an investigation in 1875 revealed them to be high-quality natural water. Around 1907, the founder of Mitsumori Honpo, following advice from physicians, devised a method to bake these crackers thinly using this carbonated water. Originally, it was a soft-textured confection used for the diets of infants and those recovering from illness. Enjoying one while strolling through the hot spring town is truly exceptional.
