Our log-cultivation method involves inoculating logs of oak and konara trees with spores and allowing them to grow slowly over about two years. In this environment of rich nature and clear air, the mushrooms develop a high aroma and a firm, meaty texture. Because they require so much time and care, the flavor is exceptional.
