This is 'Nito,' a fresh sake born from the land of Okazaki. It is brewed by Maruishi Brewing, an established brewery in Okazaki with over 330 years of history since its founding in 1690. Created in 2015, it embodies the motto 'He who chases two rabbits catches only one'—aiming to achieve the perfect balance between opposing elements: flavor and aroma, acidity and umami, heaviness and lightness. The label features the 'Mukai-usagi' (facing rabbits) crest, depicting two rabbits facing each other.
