Kakamigahara Kimchi
A single bite offers a crisp texture. While it starts with a sharp spiciness, a gentle sweetness and richness follow. It is a slightly special kimchi enhanced by the colorfulness of carrots and the fragrant aroma of pine nuts. It was created in 2005 as part of a regional revitalization effort, stemming from the bond between Kakamigahara City and Chuncheon, South Korea, which are sister cities. To be certified, it must use our local pride, 'Kakamigahara Carrots,' along with pine nuts, a specialty of Chuncheon. With the addition of grated apple, a gentle sweetness hides beneath the heat. Whether topped on rice or used in stir-fries, this is Kakamigahara's very own local kimchi, packed with the umami of vegetables. Once you try it, you'll be craving it again.
