When poured into a cup, the plump aroma of rice rises gently. With a single sip, the deep, savory umami of rice spreads gradually, accompanied by a rich acidity born from fermentation. The full-bodied, mellow flavor permeates deep into the body—this is the natural sake brewed by Terada Honke of Kanzaki. Founded in 1673, they are dedicated to producing 'Shizake' (natural sake), which utilizes additive-free and pesticide-free rice, fermented using the 'kimoto' method to harness a diversity of microbes. Their representative brand, 'Goninmusume', was named to evoke an image of pure, unadulterated sake. When served warm (nurukan), the richness and acidity blend even more smoothly. It is a cup full of vitality and profound nourishment.
