Baba Honten Sake Brewery (Daiginjo Kaishu Sanjin)
Baba Honten Sake Brewery in Sawara is a venerable establishment founded during the Tenwa era (1681–1683). It is said to have originated when the founders moved from Nara to this region and began business as koji makers. Their flagship product, 'Daiginjo Kaishu Sanjin,' is a masterpiece of the brewery, offering a brilliant ginjo aroma and a delicate flavor. The name is inspired by Katsu Kaishu, who is said to have stayed at this brewery during the Meiji era; it takes its name from his art name, 'Kaishu Sanjin.' The brewery is also renowned for its mirin production, and its 'Mujo Shiromirin,' brewed using traditional methods, is highly trusted by chefs. A single sip reveals a clear aroma and a full-bodied umami. It is a local sake of Sawara that you truly want to enjoy alongside the scenery of this water town.
