Jin-yu / Fudo
As you tilt the sake cup, the plump aroma of rice rises gently. After passing smoothly down the throat, a soft umami lingers—Jin-yu and Fudo are fine sakes nurtured by the land of Kanzaki, Chiba. It is said that the brewer, Nabedana, was granted a sake brewing license from the Sakura Domain in Genroku 2 (168lar9) and began brewing in front of Naritasan Temple. In 1942, the brewery operations were consolidated in Kanzaki Town, Katori District, where 'Jin-yu' and 'Fudo' have been brewed ever since. 'Fudo' is a brand born in 2004, created with the desire to allow drinkers to more fully enjoy the flavors derived from rice and the brewing process. Whether served chilled or warm, it is a cup that complements any cuisine. It is the essence of Chiba sake, refined by a long history.
