Founded in Bunsei 8 (1825). It is said that the first generation established the brewery here after learning sake brewing at the Ino family home, the birthplace of Ino Tadataka, the father of the Japanese map. Of the 35 breweries that once existed in Sawara, only two remain today. Their flagship Daiginjo, 'Kanou,' is a masterpiece the brewery takes great pride in, earning high praise at brewing competitions. Whether served chilled or warm, it is a drink that complements any cuisine. It is a local sake you'll want to savor alongside the historic streets of Sawara.
