Nure-senbei (Wet Rice Crackers)
Despite being rice crackers, they aren't crispy. When you bite into the moist, soft dough soaked in plenty of soy sauce, a sweet and savory umami flavor gently spreads through your mouth—Nure-senbei is a one-of-a-kind taste born in Choshi. It is said to have originated at Kashiwaya, a rice cracker shop in Choshi. It was devised by Yuji Yokoyama, the second generation of the family, and began as 'freebies' consisting of irregularly shaped pieces around 1960. It was later commercialized in 1963. Later, when the Choshi Electric Railway faced financial difficulties, they joined the manufacturing and sales process starting in 1995, leading to national fame as the 'Miracle Nure-senbei.' A moist, sweet, and savory treat unique to Choshi, a town famous for its soy sauce. It is an irresistible snack to enjoy with tea.
