This is a brand of local chicken raised in Kawamata Town, known as the 'Silk Town.' With its deep richness and elastic meat texture, it is a high-performance breed used even in famous restaurants in Tokyo. In Kawamata, which flourished with silk weaving, there was a culture where weavers raised gamefowl for entertainment, which laid the foundation for local chicken farming. A research group was established in 1985 to advance breed improvement, and sales began as 'Kawamata Shamo' in 1987. In 2022, it was registered as a Geographical Indication (GI). A long history and regional efforts have built this reliable brand. Its true value shines in dishes like yakitori and hot pots, offering moderate chewiness and juicy umami. It is a local chicken that Fukushima is proud of, born with the aim of providing the highest level of hospitality.
