For the brewing water, they use the famous local spring water 'Takanoshimizu,' and they are particular about using rice grown in Aizu and Minamiaizu. The sister brand 'Roman' reportedly got its name from the brewers' sentiment that 'sake brewing is a romance.' A deep love for the land lives in every corner of their brewing process.
