Produced at Oshiura Bandai Onsen in Kitashiobara Village, at the foot of Mount Bandai, 'Aizu Yamashio' is a rare natural salt. How can salt be produced in Aizu, a land far from the sea? The secret lies in the hot springs. By slowly boiling down hot spring water—which contains ancient seawater trapped deep underground—in a kiln, crystals are formed. Because the salinity is lower than that of seawater, the finishing process takes several days. It is characterized by its rich mineral content and mellow profile, with a subtle sweetness felt within the saltiness. With a small annual production volume, it is known as an extremely precious salt. This is Aizu's prideful seasoning that significantly enhances the flavor of dishes. Please use it for dishes where you want to bring out the true taste of the ingredients.
