When you slurp the noodles, they offer a chewy elasticity. This is Kitakata Ramen. The defining feature is the thick, flat, aged curly noodles with high water content. These 3–4mm wide noodles hold plenty of moisture, allowing them to retain their firmness without absorbing too much soup. In the warehouse town of Kitakata, these noodles—which are resistant to getting soggy—nurtured the 'Asa-ra' culture, where people working from early morning enjoy a bowl to start their day. Gentle yet profound. The springy curly noodles cling perfectly to the light soy sauce soup. It is an Aizu specialty that makes you want to eat it at the very beginning of your day.
