Uni no Kaiyaki is a specialty of the Iwaki coast, featuring fresh purple sea urchin carefully arranged in surf clam shells and steam-baked in a stone-lined pot to prevent burning. It is an early summer delight that begins to appear annually with the opening of the sea urchin fishing season in May.
