When you pick up a single piece, its softness feels almost moist against your fingers. The gentle yellow dough does not harden even after time has passed. This is a local confectionery from Kitaakita City, Akita Prefecture. It is finished by kneading butter, egg yolk, sugar, flour, and other ingredients into pounded glutinous rice. It is said that the fats from the butter and the sugar help maintain that moist, chewy texture for a long time. When sliced, the cross-section is smooth and glossy. Because it doesn't harden even when cooled, you'll find yourself reaching for another piece. It is neither quite mochi nor quite Western confectionery—a mysterious, nostalgic, and gentle flavor with a faint hint of butter.
